Tender new growth is where a tea begins. The leaf carries the character of its place.
02 · Softened leaf
Wither.
The leaf loses moisture, becoming softer and pliable enough for the next stage.
03 · Opened leaf
Roll.
Rolling opens the leaf structure and releases the juices that shape the cup.
04 · Deepening colour
Oxidise.
Contact with air deepens the colour and develops the character of black tea.
05 · Dried leaf
Fire.
Heat brings the process to a stop and dries the leaf for keeping.
06 · Finished tea
Grade.
The finished leaf is sorted by size and appearance. The grade helps describe what is in the pack.
