Brewing temperature is key: CTC chai and Assam tea need boiling water (100°C); Darjeeling tea brews best at 85–90°C; green tea at 70–80°C; white tea at 75–80°C. General rule: 1 tsp per 200ml, steep 2–4 minutes. Never over-steep — it causes bitterness. For cold brew tea, steep 1–2 tbsp in cold water for 6–8 hours in the fridge.
